Apple and Cinnamon Pancakes

A fab breakfast alternative, brunch or even dessert...
Who can say no to these babies?!

You'll need:
(per serving)
1 cup Self raising flour (i used gluten free)
1 Egg
1 1/2 cups of milk (adding gradually until the mixture is a thick-runny consistancy)
Wizz it all up, or if you're old school, wisk away!
Addictional:
Flaxseed (1 teaspoon per serving) is fab for pancakes. (Healthy benefits and adds a nice nutty flavour)
1 tea spoon of cinnamon per serving
Apple, cut up quite small
I use coconut oil to cook with. Healthy and flavoursome!
A nice hot pan... makes them super fluffy, adding the cut up apple pieces to the batter in the pan.

They are so easy to adapt aswell.
I've used almond milk before and they are super tasty!
Chocolate alternative:
1 teaspoon of cocoa powder per serving
chopped up dark chocolate

To serve:
I used natural yogurt here and a generous drizzy of honey...
Because there is'nt any sugar in the mixture, the honey is there for sweetness.
Healthy and Yum!!

By the way... don't worry if they don't turn out "perfect" on the first try... I've lost count of how many times i've practiced... keep going... try you're own variations and see how it goes!
